Mark has been cooking since the age of 16. He knew food would be a great way to gain a career foothold. He has traveled extensively, from Japan to Korea, and all over Europe, where he refined his love for using local suppliers.
Mark spent several years working in fine dining establishments in Tennessee (541 Cafe) and Kentucky (Lily's) before opening Nuvo. His original space was in Newport before settling in Covington, KY, as Nuvo at Greenup.
Mark loves infusing his food with the flavors of the season, using local suppliers, and experimenting with new textures and flavors.
